Better nut butter balls

These are much better than the last attempt... 1/2 c. almond butter 1 c. unsweetened, shredded coconut 1 c. rolled oats 1/4 c. honey (I used some date stuff that Dan made, but recipe calls for honey) 1/2 c. golden raisins Mush this all together. Use a 2T cookie scoop to get enough mushed-up stuff to roll into a ball. Place on parchment and let sit (or refrigerate) for about an hour. These do not have to be stored in a refrigerator. Meat substitute?

On our last visit to the international market here, we got some King Oyster Mushrooms. When I looked them up, I read about them being a great meat substitute, so I immediately became interested, in spite of their appearance.  That is about 10 inches long. You slice it, marinate it (we used a mix of mirin and tamari), and cook it in a skillet, then serve it over rice, which now only comes in brown at our house. We also stir-fried some other veggies to go with it.  The result was not meat-like, although had the potential to be tasty. I think grilling might work better, but it's in the teens here, so I think that will need to wait another day or two.  I have also pulled the dehydrator back into regular use. Slices of mango sprinkled with chia do well. I also like Asian Pears. This is a mushroom... maybe a king mushroom? I can't remember. All I know is that one minute, we're in the International Market looking for normal food, and the next minute, this appears in our basket. Turns out, these are supposed to be meat substitutes (they are not). Dan sliced them and soaked them in tamari and mirin, and then he sautéed them. They tasted better than they look. Combined with stir fried vegetables and brown rice and quinoa, dinner turned out to be better than I thought it would be.

A vegan weekend in Birmingham

We had a fun weekend in Birmingham with the kids and stuck (mostly) to our plant-based eating. Here's the run-down: Lena makes great buddha bowls and soups. Thanks, y'all, for living vegan while we were there! Steel-cut oats mixed with Kodiak protein pancake mix makes killer "Popcakes" (pancakes made by Pop). Flora ate about 1000 of them.  Publix and Trader Joe's beat the hell out of Kroger when it comes to having plant-based options for their shoppers. WHY DO WE NOT HAVE THESE STORES IN MEMPHIS??? Boboli makes a good whole wheat crust, although it does have a little bit of mozzarella cheese in it. (I said that we *mostly* stuck to it, right?) Pita is even more delicious when you've not had any white bread for weeks. We were forced to eat it because the restaurant didn't have any whole wheat pita.  (See previous comment.) Better day

For lunch today, I made some chili. I have made chili a hundred plus times, and I love chili with meat, but I have always added lotsa beans. In fact, I start by going to the cabinet and grabbing about 5 cans of whatever beans we have. Got to have some hot chili beans, but then I have added kidney beans, white beans, cannellini beans, black beans, even garbanzo beans, and the mixture is about 2:1 over the meat. So today I just left out the meat. And I did both the lentils and pinto beans from dry in the Instant Pot. Looks are deceiving

So dinner looked promising: It was not.  Abject failure. I withdraw my earlier comments about the Minimalist Baker. The "mozzarella" was something akin to Elmer's. We put so much Tiger Sauce on it our lips burned - but so we couldn't taste it that way. The remainder was disposed of appropriately. Nothing to add to this. Fail.
