Cornbread

I made this to go with soup one night, but I used 1/4 cup of unsweetened applesauce instead of the oil.  The cornbread was moist and held together well, and above all, it tasted good! I recommend this recipe. Tonight, I'm going to make croutons from the remaining cornbread to use on a salad with butter lettuce, spinach, avacado, grape tomatoes, red/orange/yellow peppers, corn, and red onion. Here's the recipe for the dressing (from 2teaspoons.com): 3 tablespoons olive oil 1 tablespoon fresh lime juice 1 clove garlic minced or 1 teaspoon minced shallot 2 tablespoons fresh chopped cilantro 1 tablespoon honey Salt and black pepper, to taste optional: minced jalapeƱo to taste Whisk together lime juice, garlic, cilantro, and honey until blended. Slowly drizzle in olive oil while whisking constantly until oil is fully incorporated. Add salt, pepper, and optional minced jalapeƱos to taste. Root What?

Root Bowl (serves 4) 2 sweet potatoes 3 or 4 golden beets, with leaves 1 red onion 1 bell pepper (any color) Quinoa and/or brown rice, cooked Sesame seeds, roasted or black Cut potatoes and beets into bite-sized cubes. Slice and cut onion and pepper into bite-sized strips. In a bowl, toss potatoes and beets in a drizzle of olive oil and salt & pepper; pour onto a baking sheet lined with parchment or foil and roast at 400-425 until done (about 15-20 minutes). Put onion and pepper onto a baking sheet lined with parchment or foil and put under a broiler (or on a grill) until they begin to char.  Serve in a bowl on top of quinoa and/or rice and garlic greens. Drizzle with Ginger Tahini Dressing. Sprinkle with roasted or black sesame seeds. Garlic Greens 1-2 cloves garlic Greens from beets, chopped Olive oil Mince garlic and saute in olive oil for one minute. Add greens. Saute for about 3-4 minutes. So there's this thing called "middle age." And overall, it's not bad, but in some ways, it really sucks. Weight gain, aches, pains, etc. - These suck. It also sucks when you're getting a treadmill test and the doc is telling you that you should really consider trying a new lifestyle. That's what happened to Dan in December, so off we went (after a week of food and drink debauchery with our friends, Pam and Doug Walker) into an eight-week plan of eating differently. And by differently, I mean drastically differently: no dairy no animal products, no alcohol. We considered suicide instead, but thought that might be a little drastic. So on Thursday, January 4 (really on January 3 for me, because I was doing colonoscopy prep and I think that I should get credit for something out of that misery), we chucked our lifetime styles of eating and went vegan.
