Better nut butter balls

These are much better than the last attempt... 1/2 c. almond butter 1 c. unsweetened, shredded coconut 1 c. rolled oats 1/4 c. honey (I used some date stuff that Dan made, but recipe calls for honey) 1/2 c. golden raisins Mush this all together. Use a 2T cookie scoop to get enough mushed-up stuff to roll into a ball. Place on parchment and let sit (or refrigerate) for about an hour. These do not have to be stored in a refrigerator. Meat substitute?

On our last visit to the international market here, we got some King Oyster Mushrooms. When I looked them up, I read about them being a great meat substitute, so I immediately became interested, in spite of their appearance.  That is about 10 inches long. You slice it, marinate it (we used a mix of mirin and tamari), and cook it in a skillet, then serve it over rice, which now only comes in brown at our house. We also stir-fried some other veggies to go with it.  The result was not meat-like, although had the potential to be tasty. I think grilling might work better, but it's in the teens here, so I think that will need to wait another day or two.  I have also pulled the dehydrator back into regular use. Slices of mango sprinkled with chia do well. I also like Asian Pears. I do not like red beets, but made some beet chips for Vicki because I am a wonderful person who will gladly pass the beets off to someone else. Hold the humanitarian awards for someone else. Ha

This is what he serves me...

This is a mushroom... maybe a king mushroom? I can't remember. All I know is that one minute, we're in the International Market looking for normal food, and the next minute, this appears in our basket. Turns out, these are supposed to be meat substitutes (they are not). Dan sliced them and soaked them in tamari and mirin, and then he sautéed them. They tasted better than they look. Combined with stir fried vegetables and brown rice and quinoa, dinner turned out to be better than I thought it would be.
