Meat substitute?

On our last visit to the international market here, we got some King Oyster Mushrooms. When I looked them up, I read about them being a great meat substitute, so I immediately became interested, in spite of their appearance.

That is about 10 inches long. You slice it, marinate it (we used a mix of mirin and tamari), and cook it in a skillet, then serve it over rice, which now only comes in brown at our house. We also stir-fried some other veggies to go with it.

The result was not meat-like, although had the potential to be tasty. I think grilling might work better, but it's in the teens here, so I think that will need to wait another day or two.

I have also pulled the dehydrator back into regular use. Slices of mango sprinkled with chia do well. I also like Asian Pears. I do not like red beets, but made some beet chips for Vicki because I am a wonderful person who will gladly pass the beets off to someone else. Hold the humanitarian awards for someone else.

Having written that I dehydrated beets, I really miss my jerky.

I am pleased to note that the upside to all of this is that I dropped below 190 for the first time in several years. So that is something.

  1. Hey, I washed and cut up your Brussel sprouts last nite... Tit for tat with the beets. We're even.
