A vegan weekend in Birmingham

We had a fun weekend in Birmingham with the kids and stuck (mostly) to our plant-based eating. Here's the run-down:

  • Lena makes great buddha bowls and soups. Thanks, y'all, for living vegan while we were there!
  • Steel-cut oats mixed with Kodiak protein pancake mix makes killer "Popcakes" (pancakes made by Pop). Flora ate about 1000 of them. 
  • Publix and Trader Joe's beat the hell out of Kroger when it comes to having plant-based options for their shoppers. WHY DO WE NOT HAVE THESE STORES IN MEMPHIS???
  • Boboli makes a good whole wheat crust, although it does have a little bit of mozzarella cheese in it. (I said that we *mostly* stuck to it, right?)
  • Pita is even more delicious when you've not had any white bread for weeks. We were forced to eat it because the restaurant didn't have any whole wheat pita.  (See previous comment.)
  • I know that falafel is fried. And your point is????
  • When you eat beet chips, do not panic when they, um, move through. 
We raided the international market when we got back to town and now have a refrigerator full of green stuff. Week #2 is coming to a close!
